As it’s St David’s Day today, we thought we’d spotlight our favourite Welsh chef (and 2013 Masterchef Pro finalist) Scott Davies.
Currently Head Chef at the award-winning restaurant The Three Chimneys on the beautiful Isle of Skye, Scott uses the same seafood in his kitchen that you receive in your Fishbox! Originally from South Wales, Scott’s particularly fond of our salmon!
To celebrate his heritage and in honour of St David’s Day, he’s provided us with this very special salmon recipe which combines traditional Welsh ingredients and flavours to create this inventive Scottish rendition – gin cured Shetland salmon with Dunvegan crab, pickled fennel, wasabi and apple sorbet.
Our salmon is sustainably sourced from the ice cold waters of Scotland’s Shetland islands.
