Seafood casserole recipes are some of the quickest and simplest meals to put together.
Seafood is the original fast food – it would be inadvisable to cook seafood for longer than 30 minutes in the oven.
So you see, you can have your seafood casserole on the table in less time than it would take you to go to the local drive-in for ‘fast food’ – you can microwave a couple of jacket potatoes or you would have time to cook some new potatoes to go with the casserole.
Here are a couple of seafood casserole recipes with some ideas to ring the changes.
Casseroled Basa Fish
Set oven to Gas Mark 4, 350F or 180C
Use a casserole dish with a lid that you can use on the stove top as well as in the oven.
4 basa fish fillets – about 6 oz(175g)
seasoned flour (salt, pepper, paprika)
2 tbspns olive oil
1 large onion, peeled and finely chopped
1 clove garlic, peeled and finely chopped
4 oz mushrooms, sliced
1 tbspn fresh thyme
1/2 pint (300 ml) dry cider
small pot of creme fraiche, soured cream or double (thick) cream
Rinse and dry the basa fish fillets and coat with the seasoned flour – dip them into the bowl until covered. This will serve to thicken the sauce during cooking.
Put the oil into your casserole dish and gently fry the onion and garlic until softened – not browned.
Add the mushrooms, bay leaf and thyme and give it all a good stir.
Add the cider (or seafood or vegetable stock) and place the fish gently into the casserole dish.
Cover and cook in the preheated oven for 30 minutes.
Remove the bay leaf and stir in the creme fraiche, thick cream or soured cream.
This recipe for seafood casserole can be served with mashed(creamed) potatoes, carrots and green beans.
Quick Seafood Casserole Recipe
4 white fish fillets (cod, haddock, whiting. basa as available)
1 can of tomato soup (see note below)
2 oz (50g) chopped black olives
small pot of creme fraiche, soured cream or thick cream
seasoned flour (salt, pepper)
Preheat oven to Gas Mark 4, 350F or 180C
Rinse and dry fish and coat in seasoned flour.
Put fish, soup and olives into your casserole dish and bake in the oven for 30 minutes.
Stir in the creme fraiche and serve.
This is nice with jacket (baked) potatoes or crusty bread.
You could substitute any soup you like here and also substitute the olives. For instance, use a can of mushroom soup with sliced mushrooms, a can of lobster bisque and prawns, clam chowder and canned sweetcorn – the only limit is your imagination 🙂 OR you could use a can of chopped tomatoes and a teaspoon of dried basil or oregano or both.
